2 cups mixed frozen veggies
2 tsp. evoo
3 eggs, scrambled
directions
1. heat evoo in large frying pan.
2. add frozen veggies and saute for a couple minutes. add rice and warm through.
3. scramble eggs in separate pan. add scrambled eggs to rice mixture and stir.
